Father’s Day Breakfast Menu
Quiche Toast Cups
Bloody Mary

These are the easiest quiches to make with kids. You don’t even need scales to weigh out the ingredients – all you need is a cup or an empty tin!

QUICHE TOAST CUPS

Prep Time | 10 min
Cooking Time | 15 min
Makes 6 quiches

INGREDIENTS

• 1 rasher of bacon,
• ¼ onion, finely diced
• 1 tsp olive oil
• 6 slices of sandwich bread (fresh)
• 2 eggs
• ⅔ cup milk
• ⅓ cup cheese, grated (tasty, gruyere, cheddar - any good melting cheese)
• 2 tsp parsley, finely chopped
• Salt and pepper
• Oil spray

METHOD

1. Preheat oven to 180C/350F

2. in small pan saute the onions and bacon in olive oil for about 2 minutes. set aside
3. Cut bread into rounds or just cut crusts off. A tomato can (emptied and washed) is the perfect size
4. Use a rolling pin to flatten the bread
5. Lightly spray 6 muffin tin holes with oil spray, then press the bread into the muffin tin
6. Place in oven for 3 minutes. Remove from oven and set aside. The toast cups should not be browned, just a bit dry (like "toast")
7. Whisk together the egg, milk, parsley and a pinch of salt and pepper
8. Divide the bacon mixture between the 6 toast cups, then the cheese
9. Pour 2½ tbsp of egg mixture into each cup, then immediately place in the oven. If you take too long between pouring the egg mixture into the toast cups and putting it in the oven, the egg will start soaking into the bread
10. Bake for 12 to 15 minutes until the top is lightly golden and the filling is set
11. Remove from oven and rest for 5 minutes before serving. The filling will be puffed up but it will deflate while resting
12. Garnish with extra parsley. Serve warm with our Arles Navy Stripe Napkin

BLOODY MARY

INGREDIENTS

  • 2 parts vodka
  • 4 parts organic tomato juice
  • ½ part of lemon juice, (to taste)
  • 4 dashes of Worcestershire sauce
  • 4 dashes of Tabasco
  • 1 pinch of fleur de sel (or sea salt)
  • 1 pinch of black pepper
  • 1 stick of celery
  • 1 bunch of aromatic herbs
  • ice, cubed

METHOD

1. Add plenty of ice and all of your ingredients to a shaker or stirring glass
2. If you're using a shaker, tilt it backwards and forwards a few times to mix the ingredients without making the drink frothy. If you're stirring, you can do so vigorously
3. Pour the mix into a glass. Top up with fresh ice if it's not quite full
4. Add your garnishes. Any fresh herbs and a celery stick work well
